Creamy Rice Pudding(Serves 40) - cooking recipe

Ingredients
    1 gal. plus 1 c. whole milk
    16 oz. box Carolina long grain rice
    2 c. sugar
    1 doz. egg yolks (extra large)
    2 tsp. salt
    4 tsp. vanilla
    cinnamon
Preparation
    Heat 1 gallon of milk in a large pot, uncovered, on medium heat.
    When milk is very hot, add sugar.
    Dissolve and stir with a wooden spoon.
    Add salt and stir.
    When milk comes to a full, foaming boil, add rice, lower heat a little, cover and stir every few minutes.
