Watermelon Rind Pickles - cooking recipe
Ingredients

7 lb. watermelon rind, cut off all green rind and cut out all red meat
1/2 c. pickling lime
1 pt. white vinegar
2 to 4 c. sugar
1 to 2 cinnamon sticks
Preparation

Add lime to enough water to cover rings.
Soak three hours. Rinse thoroughly.
Cook rinds in boiling water 20 to 25 minutes or until tender.
