Zucchini Rice Casserole(Serves 15) - cooking recipe

Ingredients
    1 3/4 lb. small zucchini, sliced thinly
    3 c. cooked rice
    4 c. cooked chicken or turkey, cubed
    1 (1 lb.) can tomatoes, chopped and drained
    2 1/2 c. grated Monterey Jack cheese
    2 Tbsp. chopped parsley
    Sour Cream Sauce
Preparation
    Cook zucchini in boiling water until tender-crisp (3 to 5 minutes).
    Drain well.
    In greased 3-quart casserole, layer rice, 1 cup Sour Cream Sauce, turkey or chicken, cheese, zucchini, tomatoes, rest of Sour Cream Sauce and parsley.
    Bake 45 minutes at 350\u00b0.
    Let stand a few minutes before serving.
