Fat-Free Muffins - cooking recipe
Ingredients

2 1/2 c. flour
1/2 c. sugar
1 tsp. cinnamon
1 tsp. salt (optional)
1 tsp. baking soda
1/2 tsp. baking powder
1 1/2 c. fresh or frozen fruit (blueberries, sweet cherries, mashed bananas, apples, etc.)
8 oz. plain nonfat yogurt
1/2 c. egg substitute
1/2 c. unsweetened applesauce
1/2 c. raisins
1 tsp. vanilla
Preparation

Preheat oven to 350\u00b0.
Spray a 12-cup muffin pan with nonstick cooking spray.
In medium bowl, combine flour, sugar, cinnamon, salt, baking soda and baking powder.
In a large bowl with wire whisk or fork, mix fruit, yogurt, egg substitute, applesauce, raisins and vanilla until well blended.
With spoon, stir flour mixture into fruit mixture just until flour is moistened.
Spoon into pans.
Bake 20 minutes or until toothpick inserted in center of muffin comes out clean.
Cool 10 minutes.
Remove from pan. Makes 12.
These freeze well.
