Minestrone Soup - cooking recipe
Ingredients

1 lb. Italian sweet sausage
1 c. diced onions
1 clove minced garlic
1 c. diced carrots
1 tsp. basil, crumbled
2 small zucchini, sliced
1 can chopped tomatoes (Italian pear, 1 lb.)
2 cans beef bouillon (10 3/4 oz.)
2 c. shredded cabbage
1 tsp. salt
1/4 tsp. pepper
1 can (1 lb.) Great Northern beans, undrained
Preparation

Slice sausage 1/2-inch thick.
Brown in Dutch oven.
Add onion, garlic, carrots and basil.
Cook 5 minutes.
Add zucchini, tomatoes with liquid, bouillon, cabbage, salt and pepper.
Bring soup to a boil and simmer 1 hour (covered).
Add beans with liquid and cook 20 minutes.
Yields 8 servings.
