"Skordalia" Garlic Sauce - cooking recipe

Ingredients
    2 medium-sized potatoes
    3 1/4 c. water
    3 cloves garlic
    1/2 tsp. salt
    2 Tbsp. olive oil
    2 1/2 Tbsp. white vinegar
Preparation
    Boil potatoes in 3 cups water for about 1/2 hour or until tender.
    Peel and cut into quarters.
    Place 1/4 cup water in blender with garlic cloves and pulverize for 20 seconds.
    Add 1 potato, salt, 1 tablespoon olive oil and 1 tablespoon vinegar and blend for 30 seconds.
    Add remaining potato, oil and vinegar and blend evenly for 30 to 45 seconds until all ingredients are smooth (the consistency will resemble that of pancake batter).
    Place in a bowl; cover with plastic wrap and refrigerate at least 8 hours or overnight.
    It will thicken to a spread-like consistency for serving.
    Yield:
    4 servings.
