Pecan Carrot Cake - cooking recipe
Ingredients

2 c. sifted flour
2 tsp. baking powder
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 3/4 c. sugar
4 large eggs
1 1/2 c. vegetable oil
2 c. grated carrots
2 c. chopped nuts (pecans) or can use 1 c. chopped walnuts and 1 c. raisins which have been plumped
Preparation

Preheat oven to 350\u00b0.
Prepare two nine-inch pans.
Sift dry ingredients twice.
Blend in oil and eggs.
Beat 4 minutes.
Fold in carrots and pecans.
Pour in prepared pans and bake 25 to 30 minutes.
