Sausage Ragout - cooking recipe

Ingredients
    1 1/2 lb. sweet Italian sausage
    1 1/2 lb. hot Italian sausage
    1/4 c. best-quality olive oil
    1 large yellow onion, coarsely chopped
    3 cloves garlic, peeled and minced
    2 green peppers, stemmed, seeded and coarsely chopped
    2 sweet red peppers, stemmed, seeded and coarsely chopped
    8 fresh Italian plum tomatoes, quartered
    1 c. spicy tomato sauce (best if homemade)
    1/2 c. red wine
    1/2 c. minced Italian parsley (plus additional for garnish)
    salt and freshly ground black pepper
Preparation
    Cut sausages into 1/2-inch slices.
    Heat olive oil in a skillet and add sausage pieces.
    Cook, stirring occasionally, until sausage pieces are well browned.
    Add onion and garlic; cook for another 5 minutes.
