Ingredients

1 1/2 c. crushed vanilla wafers
1/3 c. melted butter
2/3 c. toasted almonds
1 tsp. almond extract
1/2 gal. vanilla ice cream or yogurt
1 approximately (20 oz.) jar apricot preserves
Preparation

Toast almonds. Mix vanilla wafers with butter and almonds. Spread 1/2 in dish, then add 1/2 ice cream, softened slightly. Then add 1/2 preserves. Repeat. Can top with whipped cream and more almonds, if desired, but not necessary. Freeze, covered, until ready to serve.
