Ingredients

2 c. sugar
1 c. Crisco
1 c. sweet milk
3 c. self-rising flour
2 tsp. coconut extract
2 tsp. baking powder
1/2 tsp. soda
5 egg yolks and whites, separated
Preparation

Cream Crisco and sugar; add egg yolks, milk and flour (with soda and baking powder).
Mix well and add coconut extract.
Fold in stiffly beaten egg whites.
Bake in 350\u00b0 oven until done. Let stand for 10 minutes, then turn out on cooling racks.
Use coconut milk with 1 cup sugar, boiled together.
Add coconut and cool slightly; spread between layers.
Spread with Divinity Icing, top and sides.
Better made 2 days before serving.
