Ozark Cauliflower Salad - cooking recipe

Ingredients
    1 head cauliflower, cut into flowerets
    1 c. celery, chopped
    1 red sweet pepper, chopped
    1 onion, chopped
    1/4 c. chopped sweet pickles
    2 oz. sliced black olives (optional)
    2 Tbsp. light mayonnaise
    lemon juice to taste
    salt and pepper to taste
Preparation
    Boil cauliflower 5 minutes; cool immediately in ice water. Place in bowl and add remaining ingredients.
    Toss lightly; chill and serve.
    Makes 6 servings.
