Square Meal Snack - cooking recipe

Ingredients
    2 large green peppers, sliced thin
    1/2 c. onions, sliced
    1/2 c. sliced mushrooms
    1 Tbsp. each: butter and olive oil
    1/2 tsp. ground cumin
    2 Tbsp. mustard
    2 Tbsp. mayonnaise
    1/2 tsp. horseradish
    4 tomato slices
    1 c. grated Swiss or Cheddar cheese
    4 thick slices toasted whole wheat or sourdough or other bread
    1 lb. cold sliced roast beef or baked ham
Preparation
    Saute peppers, onions and mushrooms in butter and olive oil. Add cumin, salt and pepper to taste.
    Combine mustard, mayonnaise and horseradish and spread on toasted bread.
    Place bread on 4 Corning snack dishes and spread with pepper mixture.
    Add beef or ham, then tomato slice.
    Top with grated cheese.
    Place under broiler until bubbly and brown.
    Serves 4.
