Ingredients

1/2 c. raw rice
3 c. light cream (half and half)
1/2 c. dried apricots, chopped
1/2 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
3 eggs, separated
1 tsp. vanilla
Preparation

Preheat oven to 325\u00b0.
Rinse rice.
In large saucepan, combine rice, cream, apricots, sugar, salt and cinnamon.
Simmer, stirring often, over low heat, for about 20 minutes or until rice is tender.
