Spinach And Rice Casserole - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach
    1/2 c. chopped onion
    1/4 c. sliced mushrooms
    1 Tbsp. oil
    3 Tbsp. wheat or white flour
    2 c. low-fat cottage cheese
    2 egg whites
    1/4 c. egg substitute
    3 c. cooked brown or white rice
    1/4 tsp. pepper
    1/2 tsp. thyme
    1/2 tsp. garlic powder
    1/2 tsp. salt
    1 Tbsp. sesame seed
    1 Tbsp. grated Parmesan cheese
Preparation
    Preheat oven to 350\u00b0.
    Defrost spinach.
    Saute onions and mushrooms in oil.
    Combine with flour, cottage cheese, egg whites, egg substitute, uncooked spinach, cooked rice and seasonings.
    Pat into a shallow 9 x 12-inch baking dish and top with sesame seed and Parmesan cheese.
    Bake for 40 to 50 minutes until bubbling hot.
    Makes 8 servings.
