Ingredients

2 beaten eggs
1 c. sugar
2 Tbsp. soft shortening
1 c. thick tart applesauce
4 c. sifted flour
3 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
Preparation

Beat eggs. Stir in sugar and shortening, then blend in applesauce and vanilla. To this mixture, add remaining dry ingredients, gradually blending in until dough is well mixed.
For easier handling of the dough and to ensure that the doughnuts will hold their shape when cut, chill the dough in refrigerator for about 2 hours.
