Marinated Black-Eyed Pea Salsa - cooking recipe
Ingredients

1/2 c. olive oil
1/4 c. red wine vinegar
1 tsp. salt
1/4 tsp. pepper
1 clove garlic, crushed
1 c. celery, finely chopped
1/2 red onion, finely chopped
1/2 green bell pepper, finely chopped
1 jalapeno pepper, finely chopped
1 (30 oz.) can black-eyed peas, rinsed well and drained
Preparation

Mix the oil, vinegar, salt, pepper and garlic.
Pour over the remaining ingredients in a large bowl.
Cover and refrigerate at least 2 hours -- but no longer than 24 hours, stirring occasionally.
Serve with chips.
