Cajun Red Beans - cooking recipe

Ingredients
    1 lb. red beans
    3 qt. cold water
    4 onions, chopped
    4 toes garlic, chopped
    1 lb. ham trimmings with skin on
    2 lb. smoked sausage
    salt and pepper
Preparation
    Pick over beans and wash well.
    Soak overnight.
    Boil beans, onion, ham and garlic on high in a heavy pot.
    Check often so not to scorch.
    When beans are tender, add sliced sausage.
    Cook for 30 minutes.
    Add water, if necessary.
    Add salt and pepper to taste.
    Serve over steamed rice.
