Zucchini, Peppers And Tomatoes - cooking recipe

Ingredients
    1 lb. zucchini (approximately 3 1/2 c.), sliced
    salt
    2 Tbsp. butter
    1 Tbsp. oil
    1 c. sliced onions
    1 c. sliced green peppers
    1 1/2 c. peeled, seeded, chopped tomatoes
    1/2 tsp. basil
    1/4 tsp. oregano
    pepper
    1/4 c. Parmesan cheese (optional)
Preparation
    Wash, trim and slice the zucchini.
    Salt and let drain; pat dry.
    Heat the butter and oil and saute the onions until wilted. Add the zucchini and peppers and cook 2 to 3 minutes.
    Stir in the Parmesan cheese if you like.
    Serve either hot or cold.
    Serves 4 to 6.
