Vegetable Soup - cooking recipe
Ingredients

5 to 6 stalks celery, diced
3 carrots, diced
1 medium onion, chopped
1 parsnip, sliced
1 turnip, sliced
3 to 4 sprigs parsley, chopped
1 tsp. Italian seasoning
1/2 tsp. garlic salt
2 Tbsp. olive oil
1 qt. chicken broth
1/2 c. barley
Preparation

Saute celery, carrots and onions in olive oil (about 5 minutes).
Add parsley.
Sprinkle with seasonings (Italian and garlic).
Add parsnip and turnip.
Saute lightly (about 3 minutes).
Add broth and simmer until vegetables are tender (20 plus minutes).
Add barley and cook until tender (about 10 minutes).
