Hearts Of Palm Salad - cooking recipe

Ingredients
    2 avocados, peeled and coarsely chopped
    lemon juice
    1 (14 oz.) can hearts of palm, sliced
    1 (14 oz.) can artichoke hearts, coarsely chopped
    2 large tomatoes, coarsely chopped
    2 cucumbers, thinly sliced
    2/3 c. vegetable oil
    1/4 c. vinegar
    1 pkg. Italian salad dressing mix
    2 Tbsp. water
Preparation
    Sprinkle avocado with lemon juice, tossing to coat.
    Combine with the next 4 ingredients; toss gently.
    Refrigerate.
    Combine remaining ingredients and shake vigorously.
    Chill.
    Toss salad with dressing before serving.
    Serves 8.
