Chicken In Foil(4 Servings) - cooking recipe

Ingredients
    3/4 c. uncooked long grain rice
    `1 broiler-fryer chicken, quartered
    1 1/2 tsp. salt
    1 (6 oz.) can mushrooms
    2 small zucchini, sliced
    1 green pepper, cut in strips
    1 medium onion, thinly sliced
    1 (15 oz.) can tomato sauce
    1/8 tsp. hot pepper sauce
    1/2 tsp. dried leaf oregano
    1/2 tsp. dried leaf basil
    grated Parmesan cheese
Preparation
    Place 3 tablespoons of rice in center of 4 (12-inch) squares of heavy-duty aluminum wrap.
    Sprinkle chicken on both sides with salt; place on rice.
    Drain mushrooms and reserve 1/4 cup liquid. Divide mushrooms, zucchini, green pepper and onion into 4 equal portions; place each portion over each chicken quarter.
    Mix together the tomato sauce, reserved mushroom liquid, hot pepper sauce, oregano and basil; spoon over vegetables and chicken.
    Fold over food; seal tightly.
    Place in shallow baking pan.
    Bake in a 375\u00b0 oven for 1 hour and 15 minutes.
