Chunky Chicken Rice Soup - cooking recipe

Ingredients
    6 oz. boneless, skinless chicken breasts, cut into 1/2 inch cubes (about 1 c.)
    1 tsp. oil
    2 cans chicken broth
    1 c. water
    1 pkg. frozen mixed, thawed vegetables
    1/2 tsp. poultry seasoning
    1/4 tsp. pepper
    1 c. Minute original rice, uncooked
    1 Tbsp. chopped parsley
Preparation
    Cook and stir chicken in hot oil in large saucepan until browned.
    Add broth, water, vegetables, poultry seasoning and pepper.
    Bring to boil.
    Reduce heat; cover and simmer 5 minutes. Stir in rice and parsley; cover.
    Remove from heat.
    Let stand 5 minutes.
    Makes 6 servings.
    Recipe can be doubled.
