Chicken Broth (For Soup Base) - cooking recipe

Ingredients
    1 (4 lb.) ready to cook chicken
    2 qt. cold water
    3 carrots, sliced
    2 stalks celery with leaves
    1/3 c. chopped parsley
    2 medium onions, sliced
    2 bay leaves
    3 whole black peppers
    salt and pepper
Preparation
    Cut chicken in pieces; put all pieces except breast in kettle with cold water.
    Add vegetables and seasonings.
    Cover and bring to a boil; simmer 15 minutes, then skim off scum that rises to surface.
    Add breast pieces; cover and simmer for 1 1/2 hours. Strain and use cooked chicken as desired.
    Makes 1 1/2 quarts broth.
