Maui Onion Soup - cooking recipe
Ingredients

5 c. thinly sliced Maui onions
3 Tbsp. butter
3 Tbsp. flour
1 c. bourbon
2 qt. beef bouillon
salt and pepper to taste
1 Tbsp. basil
6 slices French bread, toasted
3 cloves garlic, pressed into 1/4 stick butter
1/2 c. grated Swiss cheese
Preparation

Saute onions in butter slowly until soft and golden brown. Stir in flour to form paste.
Add bourbon and stir until smooth. Gradually add beef bouillon and basil; simmer for 40 minutes.
Add salt and pepper to taste.
Mix garlic and butter spread on French bread.
Toast on cookie sheet in oven.
Ladle soup into ovenproof bowls.
Top with bread sprinkled with cheese.
Broil until golden and bubbly.
