Honey Cornmeal Muffins - cooking recipe
Ingredients

1-1/4 cups all-purpose flour
3/4 cup cornmeal
1 Tbsp. baking powder
1/2 tsp. salt
1 Tbsp. grated lemon peel
1/2 cup skim or 2% milk
1/2 cup honey
1/4 cup oil
1 egg or 1/4 cup egg product
Preparation

Heat oven to 375 degrees.
Grease bottoms only of muffin tin. In large bowl, combine flour, cornmeal, baking powder, salt and lemon peel.
Mix well.
Add milk, honey, oil and egg; stir just until dry ingredients are moistened.
Fill prepared muffin cups 2/3 full.
Bake for 13-18 min. or until very light brown and toothpick inserted in center comes out clean.
Immediately remove from pan.
Best served warm.
Makes 1 dozen.
