Fried Softshell Crabs - cooking recipe

Ingredients
    6 softshell crabs, cleaned and dressed
    4 eggs
    salt and pepper to taste
    flour
    olive oil for frying
Preparation
    Wash crabs but do not dry.
    Whisk eggs, salt and pepper until fluffy
    and set aside.
    Heat oil in large skillet.
    Dip crabs
    in flour,
    then egg and then into hot oil.
    Fry 3 to 4 minutes
    on each
    side
    on
    medium-high heat.
    Drain on paper towels
    and serve
    on
    platter with lemon wedges, if desired. Makes 3 to 4 servings.
