Caldo Verde(Green Soup) - cooking recipe
Ingredients

1/2 c. diced yellow onion
1 c. instant potato flakes
1/2 lb. pepperoni, diced
2 Tbsp. olive oil
2 qt. water
1 head cabbage, diced
Preparation

In saucepan, boil water, onion, pepperoni and oil for 1/2 hour.
Add cabbage and reduce to soft boil for 15 minutes.
Add potato flakes slowly, stirring constantly.
For thicker soup, add more flakes.
Simmer for 15 minutes.
Salt and pepper to taste.
