Chocolate Covered Cherries - cooking recipe

Ingredients
    2 c. powdered sugar
    2 Tbsp. butter, softened
    3 tsp. light corn syrup
    1/4 tsp. salt
    60 maraschino cherries
    2 c. semi-sweet chocolate chips
    4 Tbsp. butter
Preparation
    Place cherries on paper towels to absorb juice. In a bowl mix sugar, butter, syrup and salt. Knead until smooth, refrigerate 1 hour. Roll into 1/2 inch balls, flatten and wrap around a cherry. Place on waxed paper and refrigerate 1 hour. Melt together chocolate chips and 4 Tbsp. butter. Stir until smooth. Dip cherry centers in chocolate, set back on wax paper and refrigerate until hardened. Place chocolates in a covered container and refrigerate for 1-2 weeks to set up.
