Chicken Salad, Cuban Style - cooking recipe
Ingredients

2 c. chicken, roasted, skinned and cut up in cubes
1 c. potatoes, cubed, boiled and drained (should be cooled)
1 c. apples, cubed and sprinkled with lemon juice
1 hard-boiled egg, chopped
1/4 c. celery, finely chopped
mayonnaise to taste
salt and pepper to taste
lettuce leaves, small sweet peas, canned asparagus spears and pimentos (for garnish)
Preparation

Combine all ingredients in a large bowl except garnish ingredients.
Serve on a bed of lettuce leaves; garnish with small sweet peas, canned asparagus spears (drained) and pimentos (cut into thin strips).
