Chicken With Garlic Butter - cooking recipe

Ingredients
    2 Tbsp. light olive oil
    1 Tbsp. minced garlic
    1 1/2 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
    1/4 c. chopped parsley
    12 oz. mushrooms, rinsed, trimmed and cut into small pieces
    1/2 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. butter or oleo
    1/4 c. chicken stock
Preparation
    Heat oil in a wok or large skillet over high heat.
    Reduce heat to medium-high.
    Add the chicken cubes and mushrooms. Stir-fry, stirring constantly, for 3 minutes.
    Add garlic, salt and pepper to the pan. Continue to stir-fry for 3 minutes more, stirring constantly, or until the chicken cubes are cooked through.
    Add butter, parsley and chicken stock to the pan. Stir-fry for 1 minute and serve immediately.
    Serves 4.
