Carrot And Pineapple Cake - cooking recipe

Ingredients
    1 c. pitted dates
    2 c. whole-wheat flour
    8 oz. crushed pineapple, unsweetened
    1 stick corn oil margarine or butter
    1/2 c. coconut
    1 tsp. baking soda
    1 c. raisins
    1 c. chopped nuts
    2 eggs
    1 c. grated carrots
    1 tsp. vanilla
    1 c. water
Preparation
    Chop and blend dates, pecans and raisins.
    Add water and boil 3 minutes.
    Add corn oil margarine; stir and cool.
    In mixing bowl, blend date mixture with flour, soda, eggs and vanilla; mix well. Add pineapple, carrots and coconut; mix.
    Bake in oblong pan at 350\u00b0 for 1 hour.
