2 eggs, separated
2 Tbsp. honey
1 c. milk
1 Tbsp. melted butter or safflower oil
3/4 c. sifted whole wheat pastry flour
3/4 c. sifted buckwheat flour
1/4 tsp. sea salt
1 tsp. baking powder
oil (for sauteing)
honey (for topping)
Preparation

Beat egg yolks, honey, milk and melted butter or safflower oil.
Sift whole wheat pastry flour, buckwheat flour, sea salt and baking powder together.
Stir egg yolk mixture into flour mixture. Beat egg whites until they form stiff shiny peaks.
Gently fold into batter.
