Chicken Gumbo - cooking recipe
Ingredients

1 Tbsp. reduced calorie margarine
1/2 c. chopped onion
1/2 c. chopped celery
1 clove garlic, minced
1/2 lb. skinned, cooked chicken, cut into chunks
1 (26 oz.) can whole tomatoes (undrained), pureed and chopped
1 c. sliced fresh mushrooms (can be canned)
1/2 c. chopped parsley or 1 Tbsp. dried
1/4 c. chopped green pepper
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. dried basil
1 tsp. oregano
1/8 tsp. red pepper
1 1/4 c. (3 c.) spaghetti, broken into 2-inch lengths
1 1/2 to 2 c. (4 c.) cooked, cut up chicken or turkey
1/4 c. (1/2 c.) diced pimento (optional)
1/4 c. (1/2 c.) green pepper
1/2 (1) chopped small onion
1 can (2 cans) mushroom soup
1/2 c. (1 c.) broth or water
1/2 tsp. (1 tsp.) salt
dash of pepper
1/2 lb. (1 lb.) grated Cheddar cheese
Preparation

Cook spaghetti; toss all with 2 forks, except a small amount of cheese for topping.
Top with cheese.
Bake in a 1 1/2-quart casserole dish at 350\u00b0 for 45 minutes.
Serves 4 to 5.
