Pork Chop Surprise - cooking recipe

Ingredients
    4 pork chops
    1 c. uncooked rice
    1 1/2 pt. stewed tomatoes (canned Italian style)
    salt
    pepper
    1 tsp. olive oil
    1 medium onion
Preparation
    Cut off fat from chops as much as possible; use to grease skillet.
    Brown chops in 1 teaspoon olive oil in a 10-inch skillet.
    Season chops to taste.
    Place thick slice of onion on each chop.
    Pour 1 cup uncooked rice over all.
    Add 1 to 1 1/2 pints stewed tomatoes.
    Cover; simmer from 1 to 1 1/2 hours.
