West Meets East Soup - cooking recipe

Ingredients
    1 pkg. (about 13 oz.) soup mix
    2 large (about 1 1/4 lb. total) onions, chopped
    about 8 c. regular strength chicken broth
    1 large (about 8 oz.) Russet potato, peeled and diced
    1 c. thinly sliced celery
    optional ingredient (choices follow)
    about 1/2 c. fresh cilantro (coriander) leaves
    about 1 c. thawed frozen peas
    salt and pepper
Preparation
    Set aside seasonings from soup mix.
    Sort and discard foreign matter from beans.
    Rinse beans and place in a 5 to 6-quart pan. Add 2 1/2 quarts water. Let stand at least 8 hours or overnight; drain and rinse.
