Ingredients

1 1/2 c. cooked rice
2 c. skim milk
2 Tbsp. sugar
4 packets Sweet One (artificial sweetener)
1 large egg
1/2 c. golden raisins
1 Tbsp. reduced calorie margarine
1/2 tsp. vanilla extract
dash of ground cinnamon
Preparation

In a medium-sized saucepan over medium heat, combine rice, 1 1/2 cups milk, sugar and sweetener.
Cook 15 to 20 minutes, stirring occasionally, until thick and slightly creamy.
Beat remaining milk and egg; stir into rice mixture.
Stir in raisins. Continue cooking slowly for 2 minutes.
Stir in margarine and vanilla.
Mixture will thicken as it stands.
Pour into serving bowl and sprinkle with cinnamon.
Makes 8 (1/2 cup) servings with 120 calories per 1/2 cup.
