Zucchini Bread - cooking recipe

Ingredients
    2 c. zucchini, shredded (unpeeled)
    3 eggs, well beaten
    2 1/4 c. sugar
    3 tsp. vanilla
    1 c. oil
    3 c. flour
    1/4 tsp. baking powder
    1 tsp. soda
    1 tsp. salt
    3 tsp. cinnamon
Preparation
    Beat eggs; add sugar, vanilla and oil.
    Mix until well blended.
    Stir in zucchini.
    Stir in dry ingredients.
    Bake at 350\u00b0 for 1 hour in 2 greased 9 x 5-inch or 3 greased 7 x 3 1/2-inch loaf pans.
    One cup nuts can be added if desired.
