Salmon Croquettes - cooking recipe

Ingredients
    1 (15 oz.) can pink salmon
    2 large eggs
    1/2 c. flour
    1 tsp. salt
    1/4 tsp. freshly ground black pepper
    1 medium onion, diced
    1 medium green pepper, diced
    vegetable oil (for cooking)
Preparation
    Drain
    can
    of
    salmon and place salmon in large mixing bowl. Add
    remaining ingredients and mix thoroughly.
    Mixture should
    be moist
    and
    not
    too
    chunky.
    Grease 1 or 2 large skillets lightly
    with
    oil and heat over medium heat.
    Using about
    1/4 cup to form each patty 3-inches across and 1/2-inch thick.
    Cook, turning
    them
    once, until golden brown on both sides, about 4 minutes.
    Serve hot.
    Serves 6.
