Mixed Rice Salad - cooking recipe
Ingredients

2 1/4 c. water
1 (6 oz.) pkg. long grain and wild rice mix (Uncle Ben's)
1/2 c. each: mayo and plain yogurt
1/2 c. sliced green onions
1/4 c. chopped fresh parsley or 1 tsp. dried
salt and pepper
1 c. diced tomatoes
1/4 to 1/2 c. chopped celery
1/2 c. diced fresh mushrooms
1/2 c. frozen peas, thawed
1 c. diced cucumbers
Preparation

In 2 to 3-quart pan, bring water to boil.
Add rice and return to boil.
(Do not use seasoning packet.)
Cover pan and cook on low heat until water is absorbed and rice is tender (about 30 minutes).
Uncover and let rice cool to room temperature, about 30 minutes.
