Spanish Rice - cooking recipe

Ingredients
    1 lb. lean ground beef
    2 Tbsp. dried onion flakes
    1 can stewed tomatoes
    1 (12 oz.) can V-8 juice
    1 c. uncooked long grain rice
    1 clove garlic or 1/2 tsp. prepared crushed garlic
    1 tsp. oregano
    1/2 tsp. pepper
    salt
Preparation
    Brown ground beef with onion in a heavy large skillet. Add tomatoes and juice. Stir in rice, spices and seasoning. Cover with tight-fitting lid. Let cook about 20 to 25 minutes on medium to low heat until rice is cooked, stirring occasionally. Serve with cottage cheese and salad. Keeps in refrigerator up to a week.
