Puffy Pineapple Pancake - cooking recipe

Ingredients
    1 small ripe pineapple, peeled and cored
    vegetable cooking spray
    1 Tbsp. margarine, melted
    1/2 c. plus 1 Tbsp. all-purpose flour
    2 Tbsp. dark brown sugar
    3/4 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/4 tsp. salt
    3/4 c. skim milk
    1/2 tsp. vanilla extract
    2 eggs, separated
    1 egg white
Preparation
    Cut pineapple crosswise into 1/4-inch thick slices; set 5 slices aside.
    Reserve remaining pineapple for another use.
