Hoppin' John - cooking recipe

Ingredients
    1 qt. purple hull peas (canned)
    2 onions, peeled and sliced
    4 chopped hot peppers
    1 c. uncooked rice
    6 slices bacon
    2 c. diced ham or diced Spam
    2 c. hot water
Preparation
    Brown bacon in Dutch oven or large pan with a lid.
    Drain bacon; pour off all bacon grease except 2 tablespoons.
    Brown onions, peppers and dry rice in bacon grease.
    Add peas, undrained.
    Add water.
    Simmer, covered, until rice is cooked. Add ham and crumbled bacon.
    Serve with corn bread.
