Diabetic Applesauce Cake - cooking recipe

Ingredients
    2 c. water
    2 c. raisins
    1 c. unsweetened applesauce
    3/4 c. oil
    2 beaten eggs
    2 Tbsp. liquid sweetener
    2 c. self-rising flour
    1 tsp. soda
    1/2 tsp. nutmeg
    1/4 tsp. cinnamon
    1/4 tsp. orange peel
    1 tsp. vanilla
    1/2 c. nuts
Preparation
    Cook raisins in water until water is absorbed.
    Mash raisins. Add eggs, oil, applesauce, vanilla and sweetener.
    Add dry ingredients which have been mixed together.
    Fold in nuts.
    Bake in 9 x 13-inch pan for 1 hour at 350\u00b0 or until done.
    Exchange:
    1 bread, 1 fat and 1/2 fruit.
