Mom'S Potato Pancakes - cooking recipe

Ingredients
    4 c. (about 4 large) peeled potatoes
    1 egg, lightly beaten
    3 Tbsp. flour
    1 Tbsp. grated onion
    1 tsp. salt
    1/4 tsp. pepper
    oil for frying
Preparation
    Shred potatoes.
    Mix all ingredients well.
    In skillet, heat 1/4-inch oil over medium heat.
    Drop batter by 1/3 cup in hot oil. Flatten to form pancake.
    Fry until golden brown on both sides; drain on paper towel.
    Makes 6 servings.
