Winter Beef Simmer - cooking recipe

Ingredients
    1 c. chopped onion
    6 slices bacon, cut into 1/2-inch pieces
    3 lb. chuck roast, cubed
    4 medium red potatoes, halved
    3 carrots, cut into 1-inch pieces
    2 medium onions, halved
    8 oz. fresh mushrooms, halved
    1/2 c. chopped fresh parsley
    1/2 c. apple juice
    1/2 c. beef broth
    1 (6 oz.) can tomato paste
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. dried thyme
    1 tsp. fresh chopped garlic
    2 bay leaves
Preparation
    Heat oven to 325\u00b0.
    In Dutch oven combine chopped onions, bacon and roast.
    Cook over medium-high heat, stirring occasionally, until meats are browned (8 to 10 minutes).
    Stir in all remaining ingredients.
    Cover.
    Bake for 1 1/2 hours.
    Uncover.
    Continue baking, stirring occasionally, for 2 hours.
