Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. cooking oil
2 c. sugar (can be brown)
1 tsp. vanilla
2 c. peeled, grated zucchini or squash
3 c. sifted flour
1 tsp. salt
3 tsp. cinnamon
1 tsp. soda
1/4 tsp. baking powder
1/2 c. nutmeats
1 c. golden raisins
Preparation

Beat eggs until foamy.
Beat in oil, sugar and vanilla.
Beat in zucchini.
Sift flour with salt, cinnamon, soda and baking powder.
Beat into first mixture and fold in nutmeats.
Bake at 325\u00b0 in 2 well-greased loaf pans for 60 to 75 minutes.
Test at 1 hour, then test each 5 minutes until wooden pick comes out clean and dry.
