Cajun Coq Au Vin - cooking recipe

Ingredients
    1 chicken (mixed parts)
    3 Tbsp. butter
    1 c. chopped onions
    2 minced shallots
    2 sliced carrots
    1 clove garlic
    1/4 c. fresh parsley
    3 Tbsp. dry parsley
    2 Tbsp. minced onions
    2 Tbsp. brandy
    1/2 tsp. black pepper
    1/2 tsp. white pepper
    1/3 tsp. thyme
    1 bay leaf
    2 Tbsp. flour
    2 slices fried bacon
    salt and pepper to taste
    1 (8 oz.) can mushrooms
    1 1/2 c. dry white wine
Preparation
    Brown chicken
    in
    butter.
    Add
    onions, shallots, carrots, garlic, fresh and dry parsley, minced onions and brandy. Stir for 10
    minutes.
    Add
    peppers,
    thyme,
    bay leaf, flour, bacon, salt and
    pepper.
    After
    10 minutes, add wine and cook for 1 1/2 hours on low heat.
    Add mushrooms after 1 hour.
    Add water as needed; season to taste.
