Fresh Apple Cake - cooking recipe

1 c. sugar
1 3/4 c. coarsely chopped peeled apples
1 1/2 c. sifted cake flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 c. oil
1 egg
1/2 c. raisins
1/2 c. chopped nuts
Preparation

Add sugar to apples, stir to combine, let stand 10 minutes. Sift flour with salt and spices and soda.
Blend oil and egg into apple mixture.
Add flour mix, stirring until just blended, fold in raisins and nuts.
Pour batter into waxed paper lined (greased the paper) 9-inch square or round pan.
Bake at 350\u00b0 for 50 to 55 minutes.
Cool and sprinkle with confectioners sugar or serve warm with vanilla ice cream or double the recipe, making 2 cakes and ice with cream cheese icing.
