Stuffed Peppers - cooking recipe

Ingredients
    4 medium red bell peppers
    1 pkg. Success rice
    1 c. chopped fresh spinach or 1 pkg. defrosted chopped spinach
    1 medium tomato, finely chopped
    shredded Asiago cheese
    pepper to taste
Preparation
    Slice 1/4 inch off stem end of peppers, discarding seeds and membrane.
    Cook rice.
    Mix rice, spinach, tomato, cheese and pepper.
    Spoon into peppers.
    Place on 10-inch microwave-safe pie plate.
    Microwave on Medium 7 to 9 minutes until peppers begin to soften.
