Ingredients

1 c. shortening
2 c. sugar
5 eggs
1/2 tsp. salt
1 c. coconut
1/2 c. milk
1 tsp. coconut extract
1 1/2 tsp. baking powder
2 c. flour
Preparation

Sift flour, baking powder and salt together.
Cream shortening, add sugar.
Add eggs, one at a time.
Add dry ingredients, alternating with milk and extract.
Add coconut, beat well.
Pour into greased and floured Bundt or tube pan (10-inch).
Bake at 325\u00b0 for 1 hour and 10 minutes.
Remove from oven and leave in pan.
